If you don't feel like expanding your culinary horizons during self-isolation, here's help. Easy, delicious and ready-within-minutes sandwiches are the go-to meals to satiate your hunger pangs.
So, we spoke to three chefs about their take on giving a gourmet upgrade to the humble sandwich and here's what they suggested:
Paprika & Walnut Scrambled Egg Bagel by Chef Sabyasachi Gorai
Ingredients
1 bagel, halved (90g)
75g baby spinach
½ tablespoon oil
¼ teaspoon smoked paprika
25g walnut halves, chopped roughly
2 medium eggs, beaten
1 tablespoon milk
Sprinkle of chopped chives to serve
Method
1. Toast the bagel and set on a plate.
2. Meanwhile, place the spinach in a microwaveable bowl, cover with cling film and microwave on high for 1 minute or until just wilted.
3. Heat the oil, paprika and walnuts in a small saucepan until it just starts to sizzle, remove and set aside. Beat the eggs and milk together and season. Add the eggs to the pan and stir gently to scramble.
4. Place the spinach on top of the bagel and top with the eggs. Serve sprinkled with the reserved walnuts and chives.
Bonus* For a spicy version, try using hot smoked paprika. Simply use to top your favourite toast or serve with pan fried leeks instead of the spinach.
Club Sandwich by Chef Solimar Santana, Palácio Tangará, Brazil
Ingredients
3 slices of bread, lightly toasted
1 fried egg
1 thin chicken filet grilled with salt and black pepper
4 slices of crispy bacon
Lemon mayo (see recipe below)
Sliced Avocado
Sliced tomato
Lettuce
Method
Spread a thin layer of mayo on one slice of bread, add the lettuce, tomato and avocado. Close with another slice of bread. Spread another thin layer of mayo on top and add the grilled chicken filet, bacon and fried egg. Close the sandwich with the last slice of toasted bread. Cut in half and enjoy!
For Lemon Mayo
Ingredients
½ cup lemon juice
½ cup water
1 tsp Dijon mustard
1 egg yolk
Salt to taste
1 pinch of cayenne pepper
1 cup of sunflower oil
Method
Blend all ingredients except for the sunflower oil in a mixer then add the oil gradually until it forms the consistency of mayonnaise. Alternatively, simply add lemon zest and cayenne pepper to your favourite readymade mayonnaise. The lemon mayo is delicious on this club sandwich and can also become a homemade kitchen staple for use in other recipes.
Toasted Cream Cheese Crostini by Chef Saransh Goila
Ingredients
1 Crostini/Bruschetta/Any bread you like
A medium slice of cream cheese
A bowl of fresh strawberries or blueberries
1 tbsp of plum jam
Method
Take a crostini or any bread of your fancy. Lace it with some thick cheese, place some strawberries or blueberries and plum jam on it. Then, you pop it in the oven for about 10 minutes. Dust it with some powdered sugar and you are done!
