Delhi's New Experiential Cocktail Bar, Novelé, Takes Fusion To The Next Level

Welcome to Novelé, the experiential cocktail bar, nestled in the heart of the capital city at the shopping arcade of the Shangri La's Eros Hotel. Contemporary in appeal, the setting evokes a modernist, theatrical dining experience, be it the dramatic lighting or the uber-cool tones.

Curated by UK-based cocktail connoisseurs Luca Cinalli and Gabriele Manfredi, the drinks menu is imaginative at best. The cocktails have been designed after months of research, after which each type of liquor used in the recipes has been specially aged to enhance the taste. Underwater aged ingredients, first-of-its-kind table-side cocktails, a varied range of cocktail vessels, and personalised glassware, all add to the innovative experience. So, you will get some of the most eclectic and quirky blends of liquor in your drinks here.

Novelé also houses an experimental kitchen, helmed by chef Akshay Nayyar whose contemporary menu features avant-garde dishes to complement the cocktails. Each one of Novelé’s 25 handcrafted dishes is the result of more than six months of extensive research on cooking techniques like sous vide, thermomix, and pacojet technology. Food chapters have been created from the influences of Mediterranean, Ethiopian, Peruvian, and modern Asian cuisines. What we love about the detailed, yet minimalistic dishes is that they pay an ode to local ingredients and say out loud and clear that flavour rules the palate.
