One of cricketer Virat Kohli's favourite dishes is inspired by the fresh, local Himalayan produce. Yes, the mushrooms from the mountains have certainly piqued the athlete's palate courtesy Chef Pawan Bisht, the Corporate Chef and R&D Executive at one8 commune.
Hailing from a tiny village Chhoi in the Nainital district of Uttarakhand, Chef Bisht has used his childhood mushroom hunting experiences to create many wonderful dishes. 'Uttrakhand is the place which is still to be explored for its ingredients and vast culinary journey. I have been using Himalayan mushrooms a lot in my menus such as mushroom soups, mushroom tacos, the famous Himalayan mushroom and truffle oil dimsums at Mango bar & kitchen and One8commune, assorted Himalayan mushroom risotto at Mango, Mushroom sliders, hand-tossed pizzas, mushroom galouti at Verandah and verandah handcrafted are the famous dishes through which I am trying to live my childhood again,' he says.
However, its the Mushroom Dim Sums that have found a fan in many including the Indian cricketer. Chef Bisht says, 'When a guest tries your food and comes back again and again for it, what else you need? This recipe is loved and appreciated by everyone, even Virat Sir. All assorted mushrooms from the foothill of the Himalayas at Uttrakhand, my hometown, play a vital role in giving these recipes its soul. What else can one wish for? I am loving the fact that people are loving these products and my recipes.'
So, here's his version of a delicious mushroom dim sum that you can try your hand at:
Mushroom Dim Sum
For Stuffing
Sauteed button mushroom 100 gms
Sauteed Himalayan shiitake 50 gms
Spring onion 10 gms
Cream cheese 40 gmg
Salt to taste
Pepper to taste
Truffle oil few drops
For dough
Potato starch 90 gms
Wheat starch 60 gms
Beetroot juice 400 gms
Salt to taste
Method For Dough
1. In a large bowl mix potato starch, wheat starch and seasoning.
2. Boil the beetroot juice and with the help of boiled juice knead the dough for the covering.
3. The dough should be bouncy and springy.
Method For Stuffing
1. Finely chop the assorted mushrooms.
2. Take a pan and put it on a slow flame.
3. Saute the mushrooms in oil and adjust seasoning.
4. Take a bowl and keep the mixture in the bowl.
5. Add cream cheese to the mixture and adjust seasoning.
Once the mixture is cooled fill the mixture in the dough and make dumplings in any shape or size you want. Steam them and serve them with a dip of your choice. Don’t forget to drizzle truffle oil on top of dim sum just before serving.
