Cream of Broccoli Soup

Boil a head of broccoli till very soft. In a blender, blend till absolutely mushy. Transfer to the vessel and add some more water till desired consistency is reached. Add 2-3 tbsp of milk, salt, pepper and stir on a medium flame for 15-20 minutes. Serve warm.

Quick breakfast smoothie

In a smoothie blender, add 2 cups of spinach and some coconut water to make a thin shake. Add 200 gms strawberries, 1 banana and 1 tbsp chia seeds, blend again till the mixture is smooth through.

Baked Falafel

Boil 1 cup of chickpeas till well done. In a blender, mash the chickpeas along with salt, pepper, fresh parsley and dried basil. Transfer the mixture to bowl. Make them into balls and flatten to make falafel. In an air fryer or over, bake in small batches for 20-30 minutes till nicely brown.
