#BTExperts Here's A Delicious Way To Include Quinoa In Your Meal Plan

Wellness expert Dr Arjita Kumari shares the perfect Ayurvedic recipe to turn your bowl of quinoa into a tasty treat that is healthy and easy.

If you thought healthy food cannot be deliciously great, it's time to change your mind...one bowl of quinoa at a time.

This gluten-free grain is high in protein and has a host of other benefits that make it a great addition to your meal plan. Not ready to substitute it with your bowl of rice yet? Well, we spoke to Dr Arjita Kumari, Spa and Wellness Director at Alila Diwa Goa to know all about an Ayurveda-approved quinoa recipe.

Bonus: She also suggests a refreshing, summer-perfect cooler to go with it. So, here's her healthy recipe:

Quinoa Polenta (Khichdi)

This light and comforting meal is tasty and healthy. Start by rinsing the quinoa and moong dal separately until the water runs clear. Soak the quinoa and moong dal together for 20 minutes. In a pressure cooker, add quinoa, moong dal, water, and salt as per your choice. Cover and cook until 3-4 whistles. In a saucepan, heat oil, add cumin seeds, bay leaf, cloves. Add vegetables as per your choice. Then, add turmeric, coriander powder, red chilli powder and mix well. Sprinkle little amount of water and cook. Add the cooked quinoa and moong dal mixture to the vegetable mix and stir. Garnish with chopped coriander leaves.
